  5. In a pan put sugar, continuously stir to melt it. Add crushed cashews and coat it well. If required add 1 or 2 tbsn water to avoid burning of sugar. Add butter and mix them all. Place it to a plate and let it be cool.
  6. After that pour ice cream in large bowl and blend it with electric whisker for 10 minutes or until it is double in quantity.
  7. This is our basic ice cream. Now add any flavour of your choice at this stage. I am adding butterscotch essence and yellow food colour and again whisk it for 5 minutes.
  8. Again pour this ice cream into a air tight container, sprinkle crushed cashew, cover it with cling wrap to avoid ice crystals, then with lid and freeze it for 5 to 7 hours. Our butterscotch ice cream is ready. Serve chilled and enjoy it…
