I'd never had lentils before so I didn't know what to expect but they were great. This recipe is very good and it went well with salmon. I used brown rice to add. Add the rice, cumin, cinnamon, and bayleaf to the lentils.

Instructions to make Lentil Rice:
  1. Wash rice and lentils and set aside in water for 15 minutes
  2. Slice onion into thin strips
  3. Heat oil on medium heat
  4. Add onion, cardamom, cinnamon and stir it until the onion has turned translucent.
  5. turn off the heat and add ground ginger and garlic. Stir it for a minute.
  6. Add rice and lentil along with water that was set aside before.
  7. Turn on high heat and stir the contents until all are mixed togather.
  8. Add Tumeric powder and stir.
  9. Wait until water starts to boil. Add salt and stir it.
  10. Lower the heat to low and cover the pot making sure that steam is kept inside.
  11. After 15 minutes check the rice and lentil if it is cooked and all water is evaporated.
  12. Turn off th heat and sprinkle melted ghee over the rice an cover it until ready to serve.

Serve lentils and rice topped with the caramelized onions, chopped fresh parsley. These lentils and rice cook together in one pot, and feed a crowd.
