- Prepare Rose Marie Mayo
- Prepare 1/2 cup mayonnaise
- Prepare 2 tbsp tomato ketchup
- Prepare Dash Tabasco
- Make ready Mix the above and keep in the fridge
- Prepare Twice Fry Masala Chips
- Prepare 500 g potatoes, peeled and cut into wedges
- Get 2 tbsp plain flour
- Make ready to taste Salt
- Get Dash pepper
- Make ready 1 tbsp Rajah Chaat Masala
- Get 1 tsp Onion Powder
- Get Oil for Deep Frying
Coat marinated trout fillets with the batter and deep fry till the fish is cooked and the batter is crispy. Serve hot with masala chips and mint and coriander chutney. Add the garam masala, turmeric, and cumin. Stir in the lemon juice and cilantro, then add the fries and salt.

You can freeze half of the chips at this point for next time.. - To serve, heat oil and immerse the chips into the hot oil, cook till brown and crispy. - Garnish with coriander and a squeeze of lemon. Serve immediately with Fish Rava and Rose Marie Mayo.
